Apple Crumble with Brandy Creme Anglaise

The new quote on my chalk board reads: 

I made apple crumble with abandon. I didn't measure a thing. Here's what I think I did:

In a bowl, combine:
6 apples, cut into wedges
juice of 1/2 lemon
1 tsp each cinnamon, ground cloves and nutmeg
3 tbsp raw, organic sugar

In a separate bowl, combine:
1/2 cup softened butter
1/2 cup raw, organic sugar
1 cup oats
1/2 cup organic all purpose flour

Transfer the apple mixture to a buttered baking dish and top with the crumble mixture. Bake at 375 for approximately 45 minutes or until apples are tender and crumble is golden.

The recipe for the Brandy Creme Anglaise (which is ridiculously good) can be found here. The original recipe calls for bourbon.
