Baked Cinnamon Doughnuts (Gluten Free)

After spending the last while not feeling well, I came to the conclusion that something in my diet was messing with my insides. Would I rather cut out cheese or bread? A fondness for havarti provided the answer. Within two days of cutting out all gluten, every symptom disappeared.

But oh my, do I ever crave a cinnamon doughnut.

And so I did a little searching and stumbled across a great BAKED doughnut recipe (which I modified slightly) and an awesome blog called Gluten Free Girl.


1 1/4 cups almond flour/meal (I used Bob's Red Mill)
1/4 tsp baking soda
2 tsp cinnamon
1/4 tsp ground cloves
3 eggs
1/4 cup melted butter
2 tbsp honey
1 tsp pure vanilla


1. Preheat oven to 350 and lightly grease doughnut pan.
2. Combine dry ingredients. In another bowl, combine the wet ingredients and then incorporate them with the dry ingredients.
3. Pour batter into the doughnut pan (this made 10 doughnuts for me)
4. Bake for 10 minutes. While hot, dip into cinnamon sugar and let cool on a wire rack.

I'm ready to start summer, y'all!

We just picked up some Muskoka chairs. After a coat of white paint, they will be ready for summer lounging.

I am envisioning colourful stripes in my summer DIY projects.

Michael and I plan to do a lot of lakeshore trail biking.
